- 1 pound Italian sausage (mild or spicy)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 package (16 oz) gnocchi
- 2 cups fresh spinach leaves
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add Italian sausage and cook until browned, breaking it apart occasionally.
- Stir in chopped onion and cook until translucent, about 5 minutes.
- Add garlic and cook for 1 minute more.
- Pour in chicken broth, bring to a boil, then reduce heat and simmer for 10 minutes.
- Add gnocchi and cook until tender, about 3-4 minutes.
- Stir in heavy cream and spinach, cook until spinach wilts.
- Season with salt and pepper, garnish with fresh herbs, and serve hot.
Notes
- You can substitute spicy sausage with mild for a milder flavor.
- For added richness, sprinkle with grated Parmesan cheese before serving.
