A hearty and cheesy ground beef enchilada recipe that’s easy to prepare in one pan, perfect for filling family meals.

Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) red enchilada sauce
  • 8 small flour tortillas
  • 1 cup shredded Mexican blend cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro and lime slices for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add chopped onion and garlic, cook until translucent.
  3. Add ground beef, season with salt and pepper, cook until browned. Drain excess fat.
  4. Stir in enchilada sauce and simmer for 5 minutes.
  5. Spread a thin layer of sauce in a baking dish.
  6. Place a spoonful of beef mixture onto each tortilla, roll up, and place seam-side down in the dish.
  7. Pour remaining sauce over the rolled tortillas and sprinkle with cheese.
  8. Bake uncovered for 20 minutes until cheese is melted and bubbly.
  9. Garnish with fresh cilantro and lime slices before serving.
