- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (10 oz) red enchilada sauce
- 8 small flour tortillas
- 1 cup shredded Mexican blend cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro and lime slices for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add chopped onion and garlic, cook until translucent.
- Add ground beef, season with salt and pepper, cook until browned. Drain excess fat.
- Stir in enchilada sauce and simmer for 5 minutes.
- Spread a thin layer of sauce in a baking dish.
- Place a spoonful of beef mixture onto each tortilla, roll up, and place seam-side down in the dish.
- Pour remaining sauce over the rolled tortillas and sprinkle with cheese.
- Bake uncovered for 20 minutes until cheese is melted and bubbly.
- Garnish with fresh cilantro and lime slices before serving.
Notes
- You can add chopped jalapenos for extra spice.
- Serve with sour cream, guacamole, or Mexican rice for a complete meal.
