  • 2 cups cooked rotisserie chicken, shredded
  • 1 package (16 oz) gnocchi
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley and basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. add diced onion and cook until translucent, about 3 minutes.
  3. Stir in minced garlic and cook for another 30 seconds.
  4. Add chicken broth and bring to a boil.
  5. Stir in shredded rotisserie chicken and gnocchi.
  6. Reduce heat to simmer and cook until gnocchi float, about 3-4 minutes.
  7. Pour in heavy cream and add dried thyme, stirring well.
  8. Season with salt and pepper to taste and cook for another 2 minutes.
  9. Serve hot, garnished with fresh parsley and basil.
