- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups cooked rotisserie chicken, shredded
- 1 package (16 oz) gnocchi
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley and basil for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- add diced onion and cook until translucent, about 3 minutes.
- Stir in minced garlic and cook for another 30 seconds.
- Add chicken broth and bring to a boil.
- Stir in shredded rotisserie chicken and gnocchi.
- Reduce heat to simmer and cook until gnocchi float, about 3-4 minutes.
- Pour in heavy cream and add dried thyme, stirring well.
- Season with salt and pepper to taste and cook for another 2 minutes.
- Serve hot, garnished with fresh parsley and basil.
Notes
- You can substitute fresh herbs for dried thyme for a more vibrant flavor.
- Leftovers can be stored in an airtight container for up to 2 days.
- For a dairy-free version, use coconut milk instead of heavy cream.
