- 2 cups cooked pasta (penne or fettuccine)
- 2 boneless, skinless chicken breasts, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream or Greek yogurt
- 1/2 cup grated parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Season chicken slices with salt and pepper, then cook until golden brown and cooked through. Remove and set aside.
- In the same skillet, add butter and minced garlic. Sauté for 1 minute until fragrant.
- Pour in heavy cream or Greek yogurt, stirring to combine. Bring to a simmer.
- Add grated parmesan cheese, stirring until the sauce thickens slightly.
- Return cooked chicken to the skillet, tossing to coat with sauce.
- Combine the sauce and chicken with cooked pasta. Garnish with chopped parsley and additional parmesan if desired.
Notes
- Feel free to add steamed broccoli or cherry tomatoes for extra veggies.
- Use Greek yogurt for a lighter, probiotic-rich option.
