- 1.5 pounds boneless, skinless chicken breasts
- 2 cans white beans, drained and rinsed
- 1 cup diced onions
- 1 cup diced green chilies
- 4 cups chicken broth
- 8 oz cream cheese, softened
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the slow cooker.
- Add the white beans, onions, green chilies, chicken broth, cumin, chili powder, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Remove the chicken, shred it with two forks, then return to the slow cooker.
- Add the softened cream cheese and stir until melted and smooth.
- Serve hot, garnished with fresh cilantro or shredded cheese if desired.
Notes
- You can substitute the chicken with turkey for a different flavor.
- For added spice, include diced jalapenos or hot sauce.
