  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef or chicken broth
  • 1 teaspoon Italian seasoning
  • 8 oz lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish

Instructions

  1. In a skillet, cook ground beef or sausage until browned. Drain excess fat.
  2. Add diced onion and garlic; cook until fragrant.
  3. Transfer meat mixture to the crockpot. Add crushed tomatoes, broth, and Italian seasoning. Stir well.
  4. Cover and cook on low for 6-8 hours.
  5. In the last 30 minutes, add broken lasagna noodles and cook until tender.
  6. Stir in ricotta cheese and half of the mozzarella cheese. Serve hot, topped with remaining mozzarella and fresh herbs.
