Instructions
- Gather all ingredients and chop the onion and garlic. Dice the chicken breasts into bite-sized pieces.
- Optional: Sear the diced chicken in a skillet until browned, then add to the slow cooker. Alternatively, add raw chicken directly.
- Combine the chicken, corn, onion, garlic, broth, butter, and spices into the slow cooker. Stir to mix well.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through. During the last 30 minutes, stir in the milk or heavy cream.
- Adjust seasoning to taste. Serve hot, garnished with optional toppings like chives, cheese, or bacon. Pair with crusty bread or garlic bread for a complete meal.
