Instructions
- In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
- Add chopped onion and minced garlic; cook until translucent.
- Stir in kidney beans, diced tomatoes, corn, and beef broth. Bring to a boil.
- Reduce heat and simmer for 20 minutes to develop flavors.
- Stir in heavy cream and shredded cheese until melted and creamy.
- Season with salt and pepper to taste.
- Serve hot garnished with sliced green onions and extra cheese if desired.
