- 1.5 lbs boneless chicken breasts or thighs, cut into chunks
- 1 can (13.5 oz) coconut milk
- 1 cup tomato sauce
- 2 teaspoons garam masala
- 1 teaspoon turmeric
- 1 teaspoon cumin

- 1 teaspoon chili powder
- 2 cloves garlic, minced
- 1 small onion, diced
- Salt and pepper to taste
- Fresh cilantro for garnish
- Cooked rice or naan for serving
Instructions
- Place chicken pieces into the slow cooker.
- Add coconut milk, tomato sauce, garlic, onion, and spices. Mix well.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Adjust seasoning with salt and pepper.
- Serve hot over rice or with naan, garnished with fresh cilantro.
Notes
Ensure chicken is cut into uniform pieces for even cooking. For a thicker sauce, remove lid during the last 30 minutes of cooking to reduce. Use fresh cilantro for the best flavor.
