- 2 cups cooked and shredded chicken
- 1 ripe avocado, sliced
- 4 slices of bread (your choice)
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh lettuce or spinach
Instructions
- Preheat a skillet or grill pan over medium heat.
- Mix mayonnaise, Dijon mustard, salt, and pepper in a small bowl to make a spread.
- Spread the mixture on one side of each bread slice.
- Layer shredded chicken, avocado slices, and cheese on two slices of bread.
- Top with the remaining bread slices, spread side down.
- Brush the outside of the sandwiches with olive oil.
- Grill the sandwiches for 3-4 minutes on each side until golden brown and cheese melts.
- Remove from skillet, slice diagonally, and serve with greens or side salad.
Notes
- Use freshly sliced ripe avocado for best flavor.
- Vegetarians can substitute chicken with grilled vegetables or tofu.
- For extra crunch, add crispy bacon or rye bread.
