- 1 pound smoked sausage, sliced
- 4 cups diced potatoes (Yukon Gold or russet)
- 2 tablespoons olive oil
- 1 cup shredded cheddar cheese
- 1 packet ranch seasoning mix
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Optional: cooked vegetables like bell peppers or spinach
Instructions
- Start by slicing the smoked sausage into rounds and dicing the potatoes into bite-sized pieces for even cooking.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced smoked sausage and cook until browned, about 5-7 minutes. Remove and set aside.
- Add remaining olive oil to the same skillet. Add diced potatoes, season with salt and pepper, and cook over medium heat, stirring occasionally until golden and crispy, about 10-12 minutes.
- Return the cooked sausage to the skillet with potatoes. Sprinkle ranch seasoning evenly over the mixture and stir to coat all ingredients.
- Reduce heat to low. Add sour cream and shredded cheddar cheese, stirring until cheese melts and mixture is creamy. Garnish with chopped green onions before serving.
Notes
- For a healthier version, use turkey sausage or chicken sausage.
- Parboil fresh potatoes for 5-7 minutes to speed up cooking.
