Instructions

  1. Start by slicing the smoked sausage into rounds and dicing the potatoes into bite-sized pieces for even cooking.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced smoked sausage and cook until browned, about 5-7 minutes. Remove and set aside.
  3. Add remaining olive oil to the same skillet. Add diced potatoes, season with salt and pepper, and cook over medium heat, stirring occasionally until golden and crispy, about 10-12 minutes.
