- 1 lb ground beef
- 1 cup uncooked rice
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1/2 cup chopped onions
- 1/2 cup diced bell peppers
- 2 cups beef broth
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef with onions, garlic powder, salt, and pepper until browned. Drain excess fat.
- In a large bowl, combine cooked beef mixture, rice, cream of mushroom soup, beef broth, and vegetables. Mix well.
- Pour the mixture into a greased baking casserole dish. Top with shredded cheddar cheese.
- Bake covered for 25-30 minutes until bubbly and cheese is melted and golden.
- Garnish with fresh parsley before serving.
Notes
- You can add other vegetables like peas or corn for variation.
- For a crisp top, broil for 2-3 minutes after baking.
