Instructions

- Add the diced potatoes to the pot along with the dried thyme and rosemary. Stir for a minute to coat the potatoes with the herbs and aromatics. Pour in the chicken or vegetable broth, bringing the mixture to a boil. Reduce heat and let it simmer until the potatoes are tender, approximately 15-20 minutes.
- Using an immersion blender or regular blender, carefully blend the soup until smooth. Return the blended soup to the pot if using a stand blender. Stir in the heavy cream or milk, then add the shredded cheddar cheese. Continue stirring until the cheese is melted and the soup is smooth and creamy.
- Adjust the seasoning with salt and pepper. Ladle the hot soup into bowls and garnish with chopped parsley or chives. Serve immediately with crusty bread or a side salad for a complete cozy meal.
