- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, chopped
- 1 onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped chicken and cook until browned. Remove and set aside.
- In the same pot, add diced onion and bell pepper; sauté until softened.
- Add minced garlic, Cajun seasoning, smoked paprika, and cayenne pepper; cook for 1 minute.
- Pour in chicken broth and bring to a boil. Reduce heat to simmer and add cooked chicken back to the pot.
- Stir in heavy cream and season with salt and pepper. Simmer for 10 minutes, stirring occasionally.
- Serve hot, garnished with chopped parsley.

- You can substitute the heavy cream with coconut milk for a dairy-free option.
- Add hot sauce for extra spice.
