- 4 slices bacon, cooked and chopped
- 1 cup shredded sharp cheddar cheese
- 1 pound potato gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh chives or parsley, for garnish
Instructions
- Cook bacon in a large pot until crispy, then remove and set aside.
- In the same pot, sauté diced onion and minced garlic in butter until translucent.
- Pour in chicken broth and bring to a boil.
- Add gnocchi and cook until tender, about 3-4 minutes.
- Reduce heat and stir in heavy cream and shredded cheddar cheese until melted and smooth.
- Taste and season with salt and pepper as needed.
- Serve hot, topped with crispy bacon bits and fresh herbs.
Notes
- You can substitute the heavy cream with whole milk for a lighter version.
- For extra flavor, add a pinch of smoked paprika or a dash of hot sauce.
