Ingredients

  • 4 slices bacon, cooked and chopped
  • 1 cup shredded sharp cheddar cheese
  • 1 pound potato gnocchi
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh chives or parsley, for garnish

Instructions

  1. Cook bacon in a large pot until crispy, then remove and set aside.
  2. In the same pot, sauté diced onion and minced garlic in butter until translucent.
  3. Pour in chicken broth and bring to a boil.
  4. Add gnocchi and cook until tender, about 3-4 minutes.
  5. Reduce heat and stir in heavy cream and shredded cheddar cheese until melted and smooth.
  6. Taste and season with salt and pepper as needed.
  7. Serve hot, topped with crispy bacon bits and fresh herbs.
