- 1 pound Italian sausage
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 package (9 oz) refrigerated tortellini
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, cook Italian sausage over medium heat until browned. Remove and set aside.
- In the same pot, add chopped onion and cook until translucent. Add garlic and cook for 1 minute.
- Pour in chicken broth and diced tomatoes. Bring to a boil.
- Add carrots, celery, Italian seasoning, salt, and pepper. Reduce heat and simmer for 15 minutes.
- Return sausage to the pot and add tortellini. Cook until tortellini is tender, about 5 minutes.
- Garnish with chopped parsley before serving.
