- 1 pound Italian sausage
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 package (9 oz) refrigerated tortellini
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook sausage over medium heat until browned. Remove excess fat if necessary.
- Add onion and garlic, cook until translucent.
- Pour in chicken broth and diced tomatoes, bring to a boil.
- Stir in carrots, celery, basil, oregano, salt, and pepper. Reduce heat and simmer for 15 minutes.
- Add tortellini and cook according to package instructions, about 5 minutes.
- Serve hot, garnished with fresh parsley.
Notes
- Feel free to add other fall vegetables like butternut squash or kale for extra flavor.
- Use fresh herbs for a brighter taste.
