  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • Optional: 1/2 cup chopped walnuts or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, mash ripe bananas until smooth. In a separate bowl, cream softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each, then stir in vanilla extract. Combine mashed bananas into the wet mixture thoroughly.
  2. In another bowl, whisk together flour, baking soda, salt, and ground cinnamon. Gradually add dry ingredients to wet mixture, gently mixing until just combined. Do not overmix.
  3. For the cinnamon swirl, combine 2 tablespoons of sugar with 1 teaspoon of ground cinnamon. Pour half of the batter into a greased loaf pan, sprinkle half of cinnamon sugar mixture, then add the remaining batter and top with the rest of the cinnamon sugar. Swirl through the batter with a knife or skewer.
  4. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Let cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
