- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon ground cinnamon
- Optional: 1/2 cup chopped walnuts or chocolate chips
Instructions
- Preheat oven to 350°F (175°C). In a large bowl, mash ripe bananas until smooth. In a separate bowl, cream softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each, then stir in vanilla extract. Combine mashed bananas into the wet mixture thoroughly.
- In another bowl, whisk together flour, baking soda, salt, and ground cinnamon. Gradually add dry ingredients to wet mixture, gently mixing until just combined. Do not overmix.
- For the cinnamon swirl, combine 2 tablespoons of sugar with 1 teaspoon of ground cinnamon. Pour half of the batter into a greased loaf pan, sprinkle half of cinnamon sugar mixture, then add the remaining batter and top with the rest of the cinnamon sugar. Swirl through the batter with a knife or skewer.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Let cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
Notes
- For a richer flavor, add chopped walnuts or chocolate chips into the batter.
- Use ripe bananas for the best sweetness and flavor.
- Store in an airtight container at room temperature for 2 days or in the refrigerator for up to 1 week. Freeze for longer storage.
