- 3 ripe bananas, mashed
- 2 cups all-purpose flour

- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar

- 1/4 cup brown sugar
- 2 teaspoons ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a medium bowl, whisk together all-purpose flour, baking soda, and salt. Set aside.
- In a large bowl, mash the bananas until smooth.
- Beat the softened butter and granulated sugar until creamy. Add eggs one at a time, mixing well, then stir in vanilla and mashed bananas.
- Gradually add the dry ingredients to the wet mixture, stirring gently until combined.
- Mix brown sugar and cinnamon in a small bowl to prepare the swirl.
- Pour half of the batter into the loaf pan. Sprinkle with half of the cinnamon sugar. Add remaining batter and top with the rest of the cinnamon sugar mixture.
- Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack.
Notes
- Use very ripe bananas for maximum sweetness and flavor.
- Do not overmix the batter to keep the bread moist and tender.
- For a stronger cinnamon flavor, increase the cinnamon in the swirl mixture.
- Add chopped nuts or chocolate chips for extra texture.
