  • Total Time: 1 hour 15 minutes - 1 hour 25 minutes
  • Yield: 1 loaf (12 slices)

Ingredients

Scale
  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together all-purpose flour, baking soda, and salt. Set aside.
  3. In a large bowl, mash the bananas until smooth.
  4. Beat the softened butter and granulated sugar until creamy. Add eggs one at a time, mixing well, then stir in vanilla and mashed bananas.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until combined.
  6. Mix brown sugar and cinnamon in a small bowl to prepare the swirl.
  7. Pour half of the batter into the loaf pan. Sprinkle with half of the cinnamon sugar. Add remaining batter and top with the rest of the cinnamon sugar mixture.
  8. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

  • Use very ripe bananas for maximum sweetness and flavor.
  • Do not overmix the batter to keep the bread moist and tender.
  • For a stronger cinnamon flavor, increase the cinnamon in the swirl mixture.
  • Add chopped nuts or chocolate chips for extra texture.
