Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, mix maple syrup, melted butter, and vanilla until well combined.
- In another bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Stir in oats and white chocolate chips.
- Drop spoonfuls of dough onto prepared baking sheets and flatten slightly.
- Bake for 10-12 minutes until edges are golden brown.
- Allow cookies to cool completely, then dip half of each cookie into melted white chocolate.
- Set on wire racks until chocolate is firm before serving.
Notes
- For extra flavor, add a pinch of cinnamon to the dough.
- White chocolate can be replaced with dairy-free alternatives.
