- 1 lb smoked sausage, sliced
- 4 large russet potatoes, peeled and cubed
- 1/2 cup ranch dressing or ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C). Toss the cubed potatoes with olive oil, salt, and pepper. Roast for 20-25 minutes until golden and tender.
- Cook sliced smoked sausage in a skillet over medium heat until browned and slightly crispy.
- In a large bowl, combine ranch dressing, sour cream, and shredded cheddar cheese. Add the roasted potatoes and cooked sausage, then gently toss to coat evenly.
- Transfer the mixture into a greased baking dish. Sprinkle additional cheese on top.
- Bake in the oven for 15-20 minutes until bubbly and golden brown.

- For extra flavor, add chopped green onions or additional herbs.
