Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
- Slice the potatoes evenly and set aside. Slice the smoked sausage into bite-sized pieces.
- In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned, about 5 minutes. Add potatoes and sauté for about 3 minutes, then set aside.
- In a large bowl, combine ranch dressing, garlic powder, smoked paprika, salt, and pepper. Toss with cooked potatoes and sausage until evenly coated.
- Transfer the mixture into the prepared baking dish, spreading it evenly.
- Sprinkle shredded cheddar and Parmesan cheese over the top.
- Bake in the preheated oven for 25-30 minutes until bubbly and golden. Broil for an additional 2-3 minutes for extra crispiness.
