- 4 large russet potatoes, sliced
- 2 large onions, thinly sliced
- 2 cups shredded Gruyere or cheddar cheese
- 3 tablespoons butter
- 2 tablespoons olive oil
- 2 teaspoons fresh thyme, chopped
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Heat butter and olive oil in a skillet over medium heat. Add onions, thyme, salt, and pepper; cook until caramelized, about 15 minutes.
- Arrange a layer of sliced potatoes in the prepared dish. Spread half of the caramelized onions over potatoes. Repeat layers.
- Sprinkle shredded cheese evenly over the top.
- Cover with foil and bake for 45 minutes. Remove foil and bake another 15 minutes until cheese is bubbly and golden brown.
- Garnish with chopped parsley before serving.
Notes
- You can substitute Gruyere with Swiss or mozzarella cheese.
- For extra flavor, add a splash of white wine to the onions during caramelization.
