  • 2 teaspoons fresh thyme, chopped
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Heat butter and olive oil in a skillet over medium heat. Add onions, thyme, salt, and pepper; cook until caramelized, about 15 minutes.
  3. Arrange a layer of sliced potatoes in the prepared dish. Spread half of the caramelized onions over potatoes. Repeat layers.
  4. Sprinkle shredded cheese evenly over the top.
  5. Cover with foil and bake for 45 minutes. Remove foil and bake another 15 minutes until cheese is bubbly and golden brown.
  6. Garnish with chopped parsley before serving.
