- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, combine melted butter, buttermilk, eggs, and vanilla extract.
- Gradually add dry ingredients into wet ingredients, mixing until just combined.
- In a small bowl, beat softened cream cheese with powdered sugar until smooth.
- Gently fold blueberries into the batter.
- Pour half of the batter into the prepared loaf pan, spread cream cheese mixture over, then top with remaining batter.
- Use a knife to swirl the cream cheese into the batter gently.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before slicing and serving.
Notes
- Use fresh blueberries for best flavor.
- Store leftover bread in an airtight container for up to 2 days.
