Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, combine melted butter, buttermilk, eggs, and vanilla extract.
  4. Gradually add dry ingredients into wet ingredients, mixing until just combined.
  5. In a small bowl, beat softened cream cheese with powdered sugar until smooth.
  6. Gently fold blueberries into the batter.
  7. Pour half of the batter into the prepared loaf pan, spread cream cheese mixture over, then top with remaining batter.
  8. Use a knife to swirl the cream cheese into the batter gently.
  9. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow to cool before slicing and serving.
