Instructions
- Start by heating the water and butter in a saucepan over medium heat until it begins to simmer. Once simmering, remove from heat and stir in the flour until the mixture forms a smooth dough. Let it cool slightly.
- Transfer the dough to a mixing bowl and add eggs one at a time, mixing thoroughly after each addition. Stir in vanilla extract; your dough should be smooth and sticky.
- Using a piping bag fitted with a star tip, pipe short lengths of dough onto a baking sheet lined with parchment paper. Alternatively, use two spoons to form small mounds.
- Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until golden brown. Meanwhile, mix together the granulated sugar and cinnamon in a small bowl.
- Once baked, brush the churro bites with melted butter and roll them in the cinnamon-sugar mixture for maximum flavor. Drizzle with optional melted chocolate or caramel if desired.
