- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14.5 oz) diced tomatoes
- 6 cups chicken broth
- 2 cups cooked shredded chicken
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
- Fresh basil and Parmesan for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery. Cook until vegetables are tender, about 5 minutes.
- Add minced garlic and cook for another minute.
- Stir in diced tomatoes, chicken broth, cooked shredded chicken, cannellini beans, and Italian herbs. Bring to a boil.
- Reduce heat and simmer for 20 minutes to allow flavors to meld.
- Season with salt and pepper to taste. Serve hot garnished with fresh basil and grated Parmesan.
Notes
- You can substitute cooked turkey or beef for chicken for a different flavor.
- Make it vegetarian by replacing chicken with extra beans and vegetables.
