  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • Fresh basil and Parmesan for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery. Cook until vegetables are tender, about 5 minutes.
  2. Add minced garlic and cook for another minute.
  3. Stir in diced tomatoes, chicken broth, cooked shredded chicken, cannellini beans, and Italian herbs. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes to allow flavors to meld.
  5. Season with salt and pepper to taste. Serve hot garnished with fresh basil and grated Parmesan.
