- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 garlic cloves, minced
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 1 cup bourbon BBQ sauce
- 6-8 slices crispy bacon, chopped
- 4 hoagie buns or sandwich rolls
- 2 cups shredded cheddar cheese
- Optional toppings: sliced pickles, chopped onions, jalapeños
Instructions
- Combine ground beef, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper in a large bowl. Mix well and form into 1.5-inch meatballs.
- Heat a large skillet over medium heat, add oil, and cook meatballs until browned and cooked through, about 8-10 minutes. Remove and set aside.
- Pour bourbon BBQ sauce into the skillet, bring to simmer, then add meatballs back and coat thoroughly. Simmer for 5 minutes.
- Cook bacon until crispy, chop into pieces, and set aside. Slice buns open and top each with shredded cheddar cheese. Broil until cheese melts, about 2-3 minutes.
- Assemble the meatballs and sauce inside the toasted buns. Sprinkle with bacon and optional toppings like pickles, onions, or jalapeños. Serve hot.

- For extra flavor, use freshly grated cheese and quality bacon.
- Toast buns for added crunch and flavor.
- Store leftovers separately in airtight containers for up to 3 days and reheat before assembling.
