- 1/2 cup powdered sugar
- 1 cup unsalted butter, cold
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 1/4 cup fresh lemon juice
- 2 tablespoons grated lemon zest
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper for easy removal.
- Combine 1 3/4 cups flour and 1/2 cup powdered sugar in a bowl. Cut in the cold butter until the mixture resembles coarse crumbs. Press evenly into the bottom of the prepared dish. Bake for 15-20 minutes until lightly golden.
- Whisk together eggs, granulated sugar, additional flour, lemon juice, and lemon zest until smooth. Pour over the warm crust.
- Bake for an additional 20-25 minutes until the filling is set. Let cool completely, then dust with confectioners’ sugar before slicing into squares.
Notes
- Ensure to cool lemon bars completely before dusting with powdered sugar for a clean finish.
- Use fresh lemons for a more vibrant and authentic lemon flavor.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
